1. Have you read the Rag Rug Handbook by Janet Meany and Paula Pfaff? There is a reference to this problem on page 20: maintain the 30degree weft angle when placing your weft and handle the selvedge threads as little as possible. This book says that the curve is a result of both stretched selvedge warps and draw-in.
2. If sitting at your rug loom do your knees push into the finished weaving? This would tighten the rug warp in the middle and leave the outer warps looser; and then the weft packs in differently across the rug. I don't know if these ideas will help you, but good luck with this problem.
