Susan,
I think the ideal size for a dish towel is 20" x 26". I prefer to use an 8/2 or 10/2 unmercerized cotton. Using a cotton flake as the weft makes the towel even more absorbant. I also like the 22/2 cottolin, but it can be pricier. I have woven many towels in 40/2 linen also (using 20/1 for the weft). They are wonderful gift towels, but really need several washings to soften them up to give them a softer hand. A 20/2 cotton warp with a 20/1 linen weft gives you the best of both worlds.
